Thai Green Curry

This first post is going to be an easy dinner for those curry lovers out there. I was sitting in my kitchen just staring at this can of coconut milk for almost a week and just knew I wanted curry. My wonderful girlfriend said I should give thai green curry a shot.

I went through a few recipes before I found a very quick and easy one. It had two parts: curry paste and curry itself. Now after making it I realize that you can do this in one step really and here's how it goes.

STEP 1:

Call your local thai place and get some damn curry




Just kidding. You're better than that. Anyways lets start with your ingredients shall we?

Green Curry Paste

  1. Green Chili [Use based on how spicy you want it]
  2. Shallot [1]
  3. Garlic [4 Cloves]
  4. Ginger [About a thumb sized piece]
  5. Lemongrass Stalk [1]
  6. Cumin [1/2 tsp.]
  7. Cilantro [1 bunch]
  8. White Pepper [1/2 tsp]
  9. Fish Sauce [3 1/2 tsp]
  10. Brown Sugar (home come you taste so good yeah) [1 tsp]
  11. Lime Juice [1 tsp]
  12. Coconut Milk [1/4 can]
Allllllrighty then - I went to the local Asian supermarket and got pretty much everything I needed on here for about $11.50. That's a freaking great price! The only thing I don't have in there is the price for some chicken breasts which was like 8 bucks. I would also get some potatoes and/or some tofu. Now lets get down to business to defeat the huns  and get some food in your belly.

So from here on you are going to need a food processor, a cutting board, and a knife. What you are going to do is pretty simple; mince, dice, grate and generally make small enough for the food processor to blend up nice and smooth. As I'm sure you know, cooking is an art, so you as the artist can and should vary anything you want, substitute in anything you want, to make this dish your own. That whole process took me maybe 10 minutes. On to the next bit now, the good stuff, the literal meat and potatoes. If you're gunna make some rice with it I would start it about now or sooner depending on when you plan on eating. 

Start with heating up your pan - I went with a nice big cast iron skillet but just use something big enough for your portion. Oil up your pan, and toss in your paste. Get it warm, stir it a little and then toss in the goods. Start with the meat and let that cook a bit, then toss in your veggies and let it come to a boil. Reduce and you're sitting pretty in curry-land friends.
